Oh my word. I'm so tired. Are you?
I just finished almost all my Christmas shopping.
Unfortunately, I still have to make a quick trip to the mall. Blech. Ick.
I still have all my wrapping to do. I've only wrapped about 3 of Caroline's gifts.
Nothing is under my tree except for the ones she bought us and wrapped. LOL
Shoot -- I don't even have my stockings hung yet!
I'm not going to let it stress me out though. There's still a few days left.
Wednesday, I worked from 9 am until 9 pm. (Except for the two hours we had church.) I still didn't get it all done. My new job is not a "get it done at the office" kind of job though. It's a "I'm on call 24/7" kind of job which, trust me, keeps me on my toes!
Caroline and I (mostly I) cleaned her room Thursday. It took about 5 hours! It is spankin' clean now, I must say. I won't even let her play with her toys. ha-ha!
Of course she's made up for it in the Den which is a wreck again. I have to tackle the downstairs toy closet before Christmas. If I don't get it all clean, I can't handle all the new toys on Christmas.
Tonight, Mike and I went Christmas shopping and Caroline had to tag along so,
I had to sneak and buy some things while he kept her occupied. heehee
Kohl's has some really great deals on toys right now! That's all I'm saying in case she reads this! I also got her some cute Christmas pj's. I can always count on them for that. We didn't finish until almost 11:30!
Tomorrow I have to make 20 cupcakes, wrap gifts, do about 8 loads of laundry, clean my room, put away clean clothes, vacuum upstairs, fold 175 church bulletins and more!
Last Saturday night, I sat up in bed at midnight and remembered I had forgotten to fold the bulletins!
Well that's my boring but busy life right now! What are you up to?
Here's my Sweet Potato Casserole recipe I promised to "the girls" recently.
It's the best. Even if you don't like sweet potatoes, you would like this. Promise.
Sweet Potato Casserole
3 c. cooked sweet potatoes (about 5)
1/2 tsp. salt
1/2 stick butter
2 whole eggs
1 tsp. vanilla
1/2 c. milk
1 c. sugar
Preheat oven to 400. Cook, drain and mash sweet potatoes. (A tip I saw on Martha was to boil the sweet potatoes
with the skins on, then let cool completely. Once they are cool, the skins will slide right off. You just pull off w/your hands.
It's messy but it's way quicker than peeling them. That's how I do it.)
Once they are mashed, into bowl, add remaining ingredients and mix well with mixer until
you have a creamy consistency. Pour into 9x13 baking dish.
1 c. light brown sugar
1/3 c. self rising flour
1 c. chopped pecans (or more if desired)
1/3 stick butter, melted
Mix together first 3 ingredients. Pour over sweet potato mixture in dish.
Melt butter and pour carefully over topping. Try to cover or there will be dry spots.
If I had one of those Pampered Chef butter spritzers, that would be the perfect way to do it. Maybe you do.
Bake at 400 for about 25 minutes. Watch to make sure topping doesn't get too brown.
